Dying in a fire would only hurt for a few seconds, your nerves would be singed and then no pain anymore. You would probably go into shock around that time though.

Getting your head cut off.  I don't mean fast either, very slowly.  You can see some of those videos on Google.  I watched a few, and I mean you are still alive and all you can do is wait till you bleed out.  Then, your brain is still alive for a few mins, so as they cut the rest off, you can still see your body.  Pretty freakin nutz!!!!!
